New Recipe alert!!

Salmon, cabbage & noodles, and peas, oh my! 

 
 

 
Sometimes new recipes work out, sometimes no.  the cabbage & noodle dish
i made was definitely a keeper.  the recipe will be linked, if i can figure out
how to do that!  i marniated some salmon, caught fresh from the big pond to the
east, in a beer/soy/garlic mixture.  peas are peas...not much to say
about them.  for dinner tomorrow, i'm mixing it all together casserole style,
we'll see how it turns out!

Mexican Omelet
 
 
 
 
I love breakfast!  My day doesn't begin until i've had a good breakfast.
Weekends are made for hearty breakfasts.  Today I heated up some leftover
rice, chorizzo, and black beans, and made it up into a 2 egg Mexican Omelet.
Toss in a piece of honey whole wheat toast, and fresh apple cider, and that is
a breakfast worth getting up for.  It's a good thing we don't eat like this every morning!
i am an ardent coffee drinker, too, scandinavian style.  cream & sugar.  my 100%
finish grandma used to drink it with a sugar lump between her teeth...

Light lunches, leftover dinners, and a plan for the weekend

Today was a day of "easy" meals.  Breakfast was Homemade Chocolate Crunch
Granola topped with Almond Milk, 1/2 an Everything Bagel w/cream cheese,
and 1/2 a grapefruit. 
 
One of my resolutions this year is to spend at least 10 minutes in quiet prayer each day.
  I used the extra time at breakfast (while hubby was in the shower), to sit quietly in
prayer.  It may not seem like a lot, but my normal prayers are like
bullets...fast, sporadic, and not as often as i'd like.  I know God listens regardless,
but i know i can do better.
Lunch was a clementine, a few slices of colby cheese, and a few assorted crackers.
I haven't been feeling well this week, and this was good enough.
Dinner was leftover hamburger gravy, potatoes, and green beans i canned from
the garden. 
 
My weekend plan is still being thought out.  Tomorrow is the big game!  Packers
vs. Vikings.  We may be getting together with friends for pizza and beer
before the game, but yet to be finalized. 

A Healthy and Tasty Breakfast

Yumm!!  That's the first word that comes to mind with this breakfast!
Red River Valley hot cereal, with freeze-dried raspberries thrown in, topped
with pure maple syrup and almond milk.  Honey wheat toast topped with
homemade strawberry jelly, and a clementine on the side.  I'll say it
again....Yumm!!  We work on a crossword every morning to get
the brain going, and this breakfast keeps us going until lunch.

Hamburger Gravy with Mashed Potatoes!  Doesn't that just say comfort food?  In the past, I'd make this using a canned cream soup.  To try and make it a little healthier,
i made my own gravy using beef dripping from a roast we had a few nights ago.
Add fresh mushrooms, and onions, thickened with flour water...mmmm!  On the
side is a mixed greens salad with a few fresh vegies thrown in, topped with
honey dijon dressing...the perfect side dish. 
What is the old cliche'?  Eat like a king in the morning, a queen at lunch,
and a pauper in the evening.  Well, tonight i felt like a queen at dinner instead!

January 1, 2013....a new year, another attempt, to eat healthy



January 1, 2013
mmmmm....a bowl of steamy beef barley soup, with veges i dehydrated from the garden.  i've been making my own bread the last few months, and it turned out perfect this time.  it's relatively easy when i use the mixmaster to mix and knead the dough.
this blog will chronicle at least one meal a day.  a journal that will hopefully inspire me to eat a little healthier, and also to be more self-reliant in my cooking.   time to eliminate processed foods from my diet!
